Thai green papaya salad also known as "Somtum ma la kor" in Thai and "Tum mak hoong" in Laos is a local dish eaten everywhere in Thailand and Laos. There are basically three main methods to prepare Somtum.

The first of which is "Somtum Thai" which contains dried shrimp, peanuts and string bean.

The second is "Somtum pbloo" having small pickled crabs incorporated. 

Finally, the third method "Somtum Lao sai pla ra" is one which substitutes the juice of pickled mud fish instead of the ingredients previously mentioned, crab and peanuts. 

This Green papaya salad has a tart, spicy, salty, sweet, and sour taste that will have your palette screaming in delight. The slightly tart flavor of the green papaya combines well with the spice of red chili pepper and the saltiness of shrimp paste and fish sauce, the sweetness of palm sugar, and the sourness of the lime.
